The bran and germ are the whole difference. What they add nutritionally, what they cost in shelf life, and when refined flour makes sense.

A wheat kernel has three parts: starchy endosperm, fibrous bran, and oil rich germ. Whole wheat flour keeps all three. Refined flour, maida, removes the bran and germ.

  • Removing bran and germ is what gives refined flour its long, stable shelf life.
  • Bran and germ carry most of the fibre, B vitamins and minerals, along with whole wheat's characteristic flavour.
  • Refined flour is lighter and more elastic by design, useful for pastries and some flatbreads.
  • For everyday roti and paratha, whole wheat is the standard choice and generally the more complete one nutritionally.
  • A small proportion of refined flour blended into a mostly whole wheat dough adds elasticity without losing most of the fibre.
  • Check the ingredient list rather than the front label. Multigrain doesn't always mean fully whole grain.
