Urad Dal Tadka

A simple tempered dal that leans on the pulse's own earthy flavour rather than a heavy spice list.

Urad dal tadka keeps the dish simple, letting split black gram's own earthy flavour do most of the work, finished with a straightforward tempering rather than a long spice list.

The method

  • Cook split urad dal with turmeric and salt until soft, either in a pressure cooker or a covered pot.
  • Prepare a tempering separately, cumin seeds, garlic and dried red chilli in ghee or oil until fragrant.
  • Pour the hot tempering over the cooked dal just before serving, rather than mixing it in during cooking.
  • A squeeze of lemon and fresh coriander at the end brightens the dal's naturally heavier, earthier flavour.
  • Adjust consistency with a little hot water if the dal has thickened more than you want by the time it is done.

Should I soak split urad dal before cooking?
A short soak, twenty to thirty minutes, helps but is not strictly necessary since split dal cooks reasonably quickly either way.
Can I add vegetables to this dal?
Yes, spinach or other greens work well stirred in toward the end of cooking.
