How to Cook Daliya Without Making It Mushy

The window between properly cooked and mush is narrower than rice. A few technique fixes close most of the gap.

Mushy daliya is almost always a timing and ratio problem rather than a bad batch of grain. The fixes below are small, but they matter more here than they would for rice, since daliya moves from tender to mush in a narrower window.

What actually helps

  • Dry roast the daliya for two to three minutes before adding any liquid. This firms the outside of each piece and slows how fast it breaks down.
  • Use the water ratio suited to the grade you bought. Coarse daliya needs more liquid and more time than a fine grade of the same wheat.
  • Do not walk away once it reaches a simmer. Daliya moves from tender to mushy faster than rice does at a similar stage.
  • Turn off the heat slightly before the grain looks fully done, and let it finish in residual steam with the lid on.
  • If pressure cooking, count whistles rather than cooking to a fixed timer, since stove strength varies enough to matter here.
