Flaxseed Raita Topping

A simple everyday addition, roasted ground flax stirred through or sprinkled over a bowl of raita.

Raita is one of the easiest places to add flax seed, since a small spoonful stirred through or sprinkled on top changes very little about the dish itself while adding real texture and flavour.

How to make it

  • Roast flax seed in a dry pan until fragrant, then let it cool completely before grinding coarsely.
  • Combine a spoonful of the coarse ground flax with roasted cumin powder, a standard raita seasoning pairing.
  • Stir most of the mixture into the yoghurt itself, keeping a small pinch back to sprinkle on top just before serving.
  • Adjust quantity to taste. Flax's nutty flavour is noticeable but not overpowering even in a modest amount.
  • This same topping works equally well over cucumber, boondi or plain yoghurt based raita.

It is recommended for the best flavour, though pre-roasted flax seed works just as well and saves a step.
