Black Gram Sattu Paratha

A filling that wants moisture more than fat, the fix for a stuffing that keeps drying out and cracking the dough.

Sattu paratha's biggest common problem is a filling that stays powdery and cracks the dough while rolling, usually because the fix people reach for first, more oil, is not actually what the filling needs.

The method

  • Mix sattu with finely chopped onion, green chilli, ajwain, a little mustard oil and salt into a filling.
  • If the filling stays powdery and does not hold together, add a small amount of water rather than more oil.
  • Letting the mixed filling sit for a few minutes lets the onion release some moisture, which also helps it bind.
  • Divide dough and filling into equal portions, seal the filling inside carefully, and roll gently to avoid tearing.
  • Cook on a medium hot tawa with a little oil or ghee, turning until both sides are evenly golden.
