How to make it well

  • Start with a small amount of water and the sattu, mixing into a thick, smooth paste before thinning further.
  • Adding all the water at once tends to leave sattu settling into a gritty layer rather than blending in evenly.
  • Once the paste is smooth, thin it gradually with more water, whisking as you go, to your preferred consistency.
  • Season with salt, roasted cumin and a little lemon for a savoury version, or jaggery for a sweet one.
  • Drink soon after mixing, since sattu can settle again over time even after being properly blended in.
